Overnight Oats

We've got three really easy overnight oats recipes to make brekkie interesting and delicious without the morning rush.

Mango and coconut overnight oats:
For the oats:
- 1/2 cup coconut yoghurt
- 1/2 cup rolled oats
- 1/2 cup milk of choice
- 1 Tbsp chia seeds
- 1/2 tsp vanilla
- 1-2 Tbsp rice malt syrup or sweetener of choice (optional)
Toppings:
- 2 Tbsp coconut yoghurt
- 1/4 cup Mango
- 1 Tbsp shredded coconut
- 2 Tbsp rice malt syrup or sweetener of choice
To make:
- In a small bowl mix together all the ingredients for the oats. Cover and pop into the refrigerator overnight.
- In the morning pop into a serving bowl and top with the additional yoghurt, mango, shredded coconut and rice malt syrup. Then it’s ready to enjoy!

Chocolate Almond Overnight Oats:
For the oats:
- 1/2 cup coconut yoghurt or natural yoghurt
- 1/2 cup rolled oats
- 1 Tbsp cacao powder
- 1/2 cup milk of choice
- 1 Tbsp chia seeds
- 1/8 tsp sea salt
- 1/2 tsp vanilla extract
- 1-2 Tbsp rice malt syrup or sweetener of choice (optional)
Toppings:
- 1 Tbsp almond butter
- 1 Tbsp shredded coconut
- 1/4 cup fresh berries
To make:
- In a small bowl mix together all the ingredients for the oats. Cover and pop into the refrigerator overnight.
- In the morning spoon into a serving bowl and top with the almond butter, shredded coconut, rice malt syrup and berries. Then it’s ready to enjoy!
- This recipe is wonderfully adaptable and can be easily altered to suit an array of dietary preferences.

Creamy Almond Butter Porridge
For the Oats:
- 50 g organic rolled oats
- 200 ml milk of choice
Toppings:
- 1 Tbsp Smooth Almond Spread
- 1 fig
- 1 Tbsp mixed seeds
Instructions:
- Place the oats and oat milk in a saucepan over medium heat. Add a tiny pinch of salt and bring to a simmer. Cook for about 5 minutes stirring regularly until a smooth creamy porridge is made. If you want it a little runnier simply increase the milk slightly.
- Pour into a bowl and top with all the yummy goodies. We enjoy adding fruit, seeds and a big dollop of almond butter… YUM!
