Have you ever had those times where you just want to lose yourself in all the good things and put all the other life crap in a box for some other time or some other you to deal with?
Sometimes I have less energy or gumption to face this stuff head on and ploughing my face into a plate of pancakes and ice cream seems like a far more sensible and right thing to do.
It’s when I talk myself into allowing me to be irresponsible, or giving myself a break. “You deserve to have some time off”, “You’ve worked hard, you need to just think about yourself for a bit”, “It’s good to have some down time, you can’t be working 24/7”. And you know what? Most of the time this is TRUE! I’ve now realised if you get the point where your head, heart and body are saying “I’ve had enough for a bit, I need to stop.” Then chances are, that is EXACTLY what you need to do.
Sometimes it’s good to do something you shouldn’t be doing. Doing what you’re meant to do all the time can crush your spirit. Remember how awesome it felt to wag school? I certainly do. The beach sparkled in the sun more, I laughed more and the world was full of possibility.
How about you stop what you’re doing right now and just make yourself a batch of these pancakes? Or pop on the kettle? Or go outside, sit in the sun, close your eyes and breathe in some fresh air? Stop, reset and take care of yourself, even for a mini moment, it will do you the world of good.

BROWN ON BROWN ON BROWN ON BROWN PANCAKES
(BUCKWHEAT PANCAKES w/ BANANA PNB ICE CREAM, CINNAMON + MAPLE SYURP)
WHAT YOU NEED
For the pancakes:
- 1 cup buckwheat flour
- 1 tbsp raw sugar
- 1 tsp baking powder
- 1 tsp bicarb soda
- pinch of salt
- 1¼ cup buttermilk
- 1 egg, lightly beaten
- ½ tsp vanilla extract
For the ice cream:
- 2 frozen bananas
- 2 tbsp peanut butter
WHAT YOU NEED TO DO
- In a medium mixing bowl, combine the dry ingredients for the pancakes.
- In a seperate bowl whisk the wet ingredients together.
- Pour the wet ingredients into the dry and mix together until just combined. You may have some little lumps.
- Pop your skillet over a medium–low heat with a little butter.
- Scoop a little pancake batter into the pan and cook for about 2 minutes, or until small bubbles start to form and the pancake has turned matte instead of glossy.
- Cook on the opposite side for another 1–11/2 minutes, or until golden brown.
- Pop in a very low oven, covered, until the rest of the pancakes are done.
- For the ice cream, place the bananas and peanut butter in a food processor and whiz until it looks like soft serve ice cream.
- Place your pancakes on a plate, pop your ice cream cinnamon and maple syrup on top and eat.
