mango + chia breakfast pops
A fun poppy idea for a nutritious breakfast on a hot summer morning.
To make mango & chia breakfast pops, you'll need
• 2 mangoes, flesh only
• juice of 1 lime
• 1 tbsp honey
• 1/2 cup yoghurt
• 1 tbsp chia seeds
Method:
1. In a blender, add all ingredients except chia seeds. Blend until smooth, adding up to 1/2 cup water until mixture is the consistency of pouring cream. Transfer mixture to a jug or bowl.
2. To the mixture, add chia seeds and stir well. Wait 2 minutes to allow the chia seeds to soak up some liquid, and then stir well again. This will prevent the seeds from all sinking to the bottom of your ice block.
3. Pour mixture into moulds. Add sticks and freeze overnight.
