Pear Did the Sun Go Cake

In my last post I wrote about how inspired I was by the sun and how exciting it was to be outside. No such luck this week.

Earlier this week I started rushing around getting ready to do my next blog post, I got halfway through the recipe and realised I had lost the lid to my blender (the blender, sans lid, is still sitting at the bottom of the fridge waiting for me to find the missing lid). I was also freaking out at the lack of light in our house, as the weather had gone back to grey town. So instead of fighting it, I am working with it. I decided to make something wintery, comforting and with the two 4 year olds who run amok every Friday. It is so lovely to hear them playing together, they get to be in their little 4 year old world without the 7 and 9 year old telling them that the milk carton doesn’t really have jet powers or that putting your hands over your eyes doesn’t instantly hide you. It is a sound that I need to cherish, as these two little people will be off in the land of big kids next year, and Fridays will be quiet. Everyday weekday will be. An empty house. A little sad. A little woohoo!

This cake is one of those, what do we have around the house, let’s chuck it together and see what we get.

What you need

2 cups of plain flour
1 tablespoon of baking powder
1 tablespoon of cinnamon
2/3 cup caster sugar
3/4 cup vegetable oil
2 eggs
1 tablespoon of vanilla
1 cup sour cream
2 cups of preserved pear or grated pear

What to do

Preheat the oven to 180˚ and grease and flour a cake tin (the one I used was a loaf, and will need some extra time to cook through, a tin that makes a thinner cake would be fine also).

Place all the dry ingredients in to the mixer and mix. I do this instead of sifting, because I am lazy, but I find it works just fine thank you.

While the dry ingredients are ‘sifting’ mix the wet ingredients together.

Place them in to the mixer and mix until combined.

Get your pears and place them in the mix and mix together until it all looks yummy and cake battery looking.

Pour batter in to your cake tin.

Pop it in the oven, now the cooking time could vary quite a bit here depending on your tin and oven. Check at an hour and if it needs more leave it in, otherwise take it out and devour!!!!
