Lunch Box Lemon and Blueberry Muffins

Pure Harvest Lemon and Blueberry muffins

Featuring PureHarvest organic Oat Milk.

We partnered with PureHarvest to bring you a series of recipes using their Organic Plant Based Milks. Make these super quick and easy muffins, perfect for school lunch boxes or weekend adventures.

You will need:

✺ 125ml PureHarvest Oat Milk

✺ 100g buckwheat or plain flour

✺ 250g frozen blueberries

✺ 70g almond meal

✺ 170ml olive oil

✺ 1tsp vanilla paste

✺ 1 large egg

✺ 80ml maple syrup

✺ 1 1/2 tsp baking powder

✺ juice of one lemon, zest of two

✺ pinch of salt

Pure Harvest Blueberry and Lemon muffins

Let’s start!

  1. Preheat oven to 180 degrees fan forced
  2. Mix the dry ingredients, flour, almond meal, salt and baking powder
  3. Add Milk, oil, maple syrup, vanilla, egg and stir
  4. Add lemon juice and zest and stir
  5. Fold through the frozen blueberries gently
  6. Scoop mixture into muffin papers
  7. Bake for 25min or until golden on top
  8. Allow to cool
